Taittinger's very first single-vineyard champagne, Les Folies de la Marquetterie is a blend of Chardonnays (45%) and Pinot Noir (55%), made exclusively from grapes grown at the Folies vineyard that overlooks the Chateau de la Marquetterie, the birthplace of the Taittinger family Champagne.
A green harvest is carried out on the selected plots of vines to ensure the fruit offers optimum sweetness and maturity. Only the juice from the first pressing is used in the cuvee. Each plot is vinified in small volumes and certain batches in large old oak casks. The bottles are aged for five years on lees to bring this wine to reach the perfect harmony.
This deep golden Champagne has fine, delicate bubbles. On the nose, its intense, highly fruit aroma includes peaches and apricot jam with subtle toasted brioche and vanilla notes. It is full-bodied and fruit on the palate with golden peach flavors leading to a finish with light woody notes. This full-flavored, harmonious Champagne is distinguished by its immense richness and complexity.
