Background: As the son-in-law of the legendary Chablis winemaker Dauvissat, Laurent followed the technique of the master: grapes are handpicked; winemaking is unusual with grapes fermented in temperature-controlled enamelled tanks at fairly high temperatures, then allowed to undergo malolactic fermentation. Aged in oak barrels but only 10% new, the balance being 5-7 year old 228 litre casks. This gives structure but without overshadowing the lovely fruit.
