Producer note: A very careful thinning of the grapes on the young vines enabled us to remove completely the second generation of bunches which had appeared as a result of the frost with a delay of three weeks behind the first. At harvest time, therefore, we had evenly ripe and very concentrated grapes both on the old and young vines. Heavy rain a few days before the harvest made it important to pick quickly and slightly diluted the grapes without really affecting quality. The Pavillon Rouge 1991 can be enjoyed now. On the palate, it is soft, fleshy and quite fresh. (June 2007)
